Fajitas are a favorite dinner in our house; although my children refuse to call them fajitas instead, they call them "the other version of tacos." I guess in their defense, that's really all they are. These fajitas are my favorite as I can have them on the table in 15 minutes or less, and the clean-up is minimal. The trick to these fajitas is the TJ's shaved beef steak as it cooks quickly, yet the marbling in the meat leads to an excellent flavor.
Start by preheating your over to 450 degrees. Then spread the meat out evenly on a large baking pan. Mix 1/4 cup of the Italian Tomato Paste (in a tube) with either a 1/2 packet of TJ's taco seasoning or 2 Tablespoons of Chile Lime Seasoning Blend (I love both seasonings, although the taco seasoning does contain sugar, so depending upon your eating habits, you make the decision.) With a spatula or your fingers, spread the seasoned tomato paste over the meat. Next, pour the Frozen Fire Roasted Bell Peppers and Onions next to the meat and make sure they are not doubled on top of each other. Sprinkle the Chile Lime Seasoning Blend over the peppers and onions and place the pan in the oven for 10-12 minutes, depending on how done you prefer your fajita meat.
While the beef, peppers, and onions are cooking, warm up your tortillas and grab your toppings. If you are trying to eat super clean, the TJs jicama wraps are an excellent tortilla substitution. Also, the TJ's Pico De Gallo is a fantastic topping for these tasty fajitas!
Once your meat and peppers are fully cooked, plate everything up and serve! We love this meal with the TJ's Chopped Southwestern Salad or with some cucumbers, carrots, and jicama sliced and sprinkled with a bit of Chile Lime Seasoning Blend.
15 Minute Fajitas
(Serves 4 average eaters but I like to double this for my family so that there are leftovers.)
1 package All Natural Shaved Beef Steak
1/4 cup Italian Tomato Paste
1/2 packet of TJ's Taco Seasoning or 2 Tablespoons of Chile Lime Seasoning
Extra Chile Lime Seasoning for the Peppers and Onions
1 bag of Fire Roasted Bell Peppers and Onions
All of your favorite Fajita toppings
